I'm planning on taking 11 days of rest, even less than 2 weeks but I just want to make sure.

No. It takes about as long to lose muscle mass as you've been working out. If you've been working out for 3 months, then it will take 3 months to start losing it.

Yes after a week muscle loss occurs.

Some, but if you're worried about maintaining a certain fitness level you've been working on for a while, you won't lose all that much progress.
